Italian Chicken with Polenta

Italian Chicken with Polenta
This classic, Italian Chicken with Polenta recipe is quick but delicious and will create memories of classic comfort food for your family for years to come!
  • 6 chicken thighs (skin and bone on)
  • 1 box instant polenta
  • 2 tbsp olive oil
  • 1 tsp coarse salt
  • 1 tsp pepper
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1/2 tsp cinnamon
  • 1/2 whole nutmeg - grated over the top of chick
  • 1 jar The Italian Cooks Tomato & Basil Sauce
1. Preheat oven to 350 degrees. 2. Mix dry ingredients (except cinnamon and nutmeg) in a bowl. 3. Generously coat both sides of chicken with mixture. 4. Place seasoned chicken thighs in a heated, oil coated medium skillet. Brown chicken for about 15 minutes on each side until golden brown. 5. Remove chicken from pan and place in a baking dish. Cover with one jar of sauce. Add the cinnamon and nutmeg and gently stir in. 6. Cover with foil and bake for 45 minutes until chicken is cooked through. 7. Meanwhile, prepare instant polenta according to package directions. 8. Place cooked polenta in the center of a serving dish and arrange chicken pieces around it. Spoon extra sauce on top and save some for passing.
